Tasty Thursday

I have a slight obsession with Where's Waldo.  Every time I see a Where's Waldo book, my face lights up.  I've loved Waldo since childhood.  It's something about finding a man in a striped sweater and his friends that get me all excited...

For Christmas yesterday, the BF got me a compilation book of all the Where's Waldo puzzles.

Best. Christmas. Ever.

I've only had the chance to complete one puzzle and I've come to this conclusion.  There's no way a nine year old can do them.  Ain't no way.  After a couple of minutes, my brain was hurting and it felt like I was growing cataracts or something on my eyes, they were so sore.

Anyway, this Christmas I tried out two recipes that are definite keepers.  One's an appetizer type and the other's a boozy type.

I made Killer Artichoke Bread from The Girl Who Ate Everything.  Let me start off by saying that it really was killer.  You can't go wrong with bread, cheese and butter.  And artichokes are vegetables.  Right?  So it can't be THAT bad for you.

Killer Artichoke Bread
adapted from The Girl Who Ate Everything

-1/4 c butter
-big spoonful of minced garlic
-14 oz jar of marinated artichoke hearts, well drained and chopped
-about a cup of shredded Mozzarella
-about half a cup of shredded pepper jack
-about half a cup of grated Parmesan
-1/2 c sour cream
-1 loaf of Italian bread, sliced lengthwise
-salt and pepper, to taste

Melt the butter over medium-high heat.  Add the garlic and cook for about 30 seconds.  Add the chopped artichoke, cheeses and sour cream.  Stir until everything is combined and remove from heat.

Spoon the artichoke/cheese mixture onto the bread.  Broil for about 4-7 minutes or until the cheese is melted and starts to brown.

Slice into pieces and you got yourself some cheesy artichokey goodness.


And since you've wrecked your diet by eating this bread, you might as well make yourself a boozy milkshake later.

This peppermint milkshake requires three must have ingredients:  peppermint schnapps, vanilla ice cream and whole milk.  Whole milk!  What!?  I know.  But the thick milk helps it have that creamy thickness that alot of milkshakes have.  And it's still thin enough you can drink through a straw without having a brain aneurysm.  And besides, at this point you've already gone past the point of no return with your calorie intake, so what the heck.  Indulge.

Peppermint Cocktail Milkshake
-1 c whole milk
-2 c vanilla ice cream
-3 oz peppermint schnapps

Blend everything together.  If you have some candy canes laying around, crush 'em up and add those too!  I don't want to say this makes two servings because, honestly, I could drink the whole darn thing, so enough for two glasses it makes instead.  And if you're feeling really fancy, add whipped cream on the top.

Thanksgiving in Seattle Recap

In September, my grandmother passed away.  It was a sad time for the whole family, but there was a silver lining to such a loss.  My grandmother wanted the whole family, her kids, the grand kids (and now a great grand kid) and spouses to get together.

Now we're not a big family (there's only 16 of us), but we all live in different parts of the country.  San Diego.  Arizona.  Texas.  New York City. Kentucky.  And Maryland.  This makes it kinda hard to plan and meet in a unified location.  It's been maybe a decade since a majority of the whole family has been in the same place.  Well, in memory of my grandmother, Aileen, and thanks to the planning of my aunt Bonnie, we were able to make it happen.

Aileen grew up in Seattle and that's where her family is peacefully at rest.  So, a Seattle Thanksgiving it was.

We had a memorial and reunited her with her parents, sister and husband and later spread some of her ashes in a lake from the neighborhood she grew up in.  As somber as it was, it was also comforting to know that Aileen got her wish.  The whole family came together to see her home.

The rest of the trip was spent catching up and just enjoying being in the presence of each other.

So here's a recap:
-We had a gorgeous house on Lake Washington that fit all sixteen family members.
-Each family contributed to a meal every day.
-Thanksgivakkuh.  Thanksgiving and the first day of Hanukkah were the same day this year, which won't happen again in our lifetime.  I learned about the history of the menorah, more Jewish traditions and ate latkes.  Thanksgivakkuh for the win.
-My cousin Daniel.  The last time I saw him, he was in elementary school.  Now, he's almost done with college.  My goodness, he's a man now.  I.Feel.Old.
-I tried beef tongue for the first time.  It tasted just like salty roast beef.  Not too bad.  Points for trying new things.
-How happy my mom was to have all her kids together at the Korean grocery store, even though we were running around all over the place and brought random things to the cart.  Some things never change.
-Korean food.  Nuff said.
-Fried turkey.  Delicious.  Definitely the route to go if you want a turkey cooked in 30 minutes.
-Rounds of Catchphrase.  Nuff said.
-Having fish tacos from fish that were thrown at the world famous Pike's Place Fish Market.
-Hearing childhood stories from the adults.  Let's just say minors weren't allowed in the room.
-My family can throw down on some alcohol.
-The feeling of regret that we never did such a get together before, but energy to do something like this every couple of years.
-And Lola.  But Lola gets her own section.  Keep reading for more on her.
-I was a little bummed out that the BF didn't have his beard grown out.  All the Seattle men had beards, he would've fit in just fine.
-Came home to cat that hasn't had human interactions for a week and was needy and very talkative.

The BF and I stayed longer in order to enjoy Seattle more since we've never been.  We didn't go up in the Space Needle, but up in the Columbia Center building instead.  It's cheaper and it's taller and they have a Starbucks on the 40th floor with killer views.  It was the one day the sky was clear and we could see Mt. Rainier.  Awesome views of the whole place.  Speaking of Mt. Rainier, we tried venturing out there.  We drove 2 hours, just to get turned around because a snow storm closed the roads.  Bummer.  And also speaking of Starbucks, we found the oldest one at Pike's Place.  It's not the original location (that one is no longer standing), but again, it is the oldest.  And it was PACKED.  Waiting out in a line curving into the street is not for me.  I ain't got time for that.  But I did have time for a less busy Tully's Coffee, which is actually owned by Dr. Dreamy (Grey's Anatomy reference).  We discovered the Fremont neighborhood and the troll.  It was a neighborhood that I could see myself fitting right in. We caught up with a friend that just moved into the area a couple of weeks before we arrived.  And the BF and I also discovered two places that would totally validate moving to Seattle, if the need ever came up:  Taco Time and Taco Del Mar.

But something I will not miss, that traffic!  Well, not really the traffic, but the layout of the roads.  The city planners really love their 5 point intersections.

And Lola.  My dear Lola.  This almost one year old has captured my heart.  She is the calmest baby ever and it helps that she's adorably cute.  I'm just sorry, but I have to take a minute to gush over her.

Tasty Tuesday

You know what's delicious?

Bacon.

Bacon is delicious.

Add a brown sugar coating to the said bacon and you have yourself a delicious start to your day or end to the night, or beginning of your afternoon.  Whatevs.  I don't judge.


First of all, I like to cook pork bacon in the oven.  It's a time saver, less messy, and the fat drips right off onto the pan.

Once the bacon is all laid out on the pan, sprinkle brown sugar on top with a little bit of black pepper.  And that's it.

Pop it in the oven at 350 degrees for about 30 minutes.  The result is a savory piece of bacon with a crunchy top of caramelized brown sugar.

It's That Time of the Year...

My job performance review is coming up!

Now, I'm the lucky type of person that usually never stressess about work.  It's not high paced, I don't have people breathing down my neck, and I rarely have short deadlines.  Sure, there are moments when I get angry or upset, but it's so trivial, I'm over it pretty quickly.  And there's plenty of times when I just don't want to be there, but that's only because I would rather watch movies in my Snuggie, not because of a stressful job.

I pity those that have to take their work home, when work consumes their lives.  I'm aware there's plenty that like that arrangement, but I am definately not one of those.  As soon as it's time to go, I'm peacing out and my car is already halfway out of the parking lot.  Whatever I was working on will wait til the next day.  I'm lucky enough I have that luxury with my job.

But this is the only time of year I have to bring my work home.  A little background:   At the beginning of the year, we're given a set of performance objectives that we have to complete and show for at the end of the year.  Well, the end of the year is here (it's usually November/Decemberish).  With the way our objectives are set up, we essentially have to keep track of EVERYTHING we do.  No problem.  I've been doing that.  My problem and the reason I'm working at home, is because I have to put all this information together.  I have to quantify a year's worth of stuff and it always takes way more time than I give myself.  It's my own fault.  If I were to do this right, I would've used the whole year to work on this, but I always think the method we're supposed to use is counterproductive and end up waiting til the last minute.  Thus, this being the only time of year I'm stressed.  On the plus side, good reviews mean time off awards and bonuses.  Yes, please.

Mini Beach Vacay

A bit ago, the BF and I took a trip out to Ocean City, MD.  October starts the time of year when dogs are allowed on the beach, so we took Gypsy along.  And since I'm a federal employee and was essentially temporarily unemployed during the beginning of the government shutdown, the trip was a great way to get my mind off things. 

Recap/things I've learned from the trip:

-Gypsy does not like the ocean.  The waves freak her out.  She was ready to go home within minutes at the beach.
-The first week of October is a great time to go to the ocean (if there's not a hurricane in the forecast).  It was 80 degrees and the water was still relatively warm.  The only people in town were retirees, parents with small kids, a couple of other younger kidless couples and locals.  The BF and I are quiet folks.  We fit right in with the old people.
-Off season means special prices at restaurants.  The businesses still open want to keep people coming in so discounts and other specials are offered.  Heck yea!  I'm a fan of half off Mexican food!
-Gypsy will let you bury her in sand.  She was so chill on the beach (once she realized we weren't going to force her in the water anymore), she laid down and let us make her into a sand crab and sand mermaid.
-How well we fit in with retirees and those with AARP memberships....hmmm...

Tank Top Hanger

So when we moved, I was lucky enough to get a closet upgrade with so much more room.  Well, because I'm a shopaholic, the closet was filled to the brim with clothes.

About a foot of the hanger space was dedicated to tank tops.  Instead of doing what I should do and getting rid of stuff, I chose an alternative.

I bought a cheap tie hanger!

And what was a foot plus of tank top space, I shrank to a couple of inches.


Even though I'm a hoarder and get anxiety getting rid of stuff, I promise one of these days I'll fill a couple of donation bags, but until then, creative space saving methods it is...

What Do You Wanna Be When You Grow Up?

Who ever actually knew what they wanted to be when they grow up? 

Firefigher.  Awesome!  Astronaut.  You can do it!  Batman.  Umm, ok, if you say so, that's cool!

As for me, I thought I had it down to what I wanted to do when I grew up.  And then, in a heartbeat, that thought would change to something completely random.  Whether it was related to something I saw on tv or read about or just came out of nowhere, my mind was set on it.

For instance, take all of the things I've at some point wanted to be and some I still wouldn't mind to be.  See below.

Teacher.  When I was very young, I wanted to be a teacher.  I would write out IQ questions from those education games onto a chalkboard and read to a room full of stuffed animals and dolls.  I think I wanted to be a teacher only because I liked being bossy and telling people what to do.

Veterinarian.  I love animals, minus insects and arachnids, those I can do without.  But because of my love for animals, I wanted to take care of them and make them feel better.  Then I realized I would have times when I would have to euthanize these beloved animals.  Nope.  I did not want to be the grim reaper for dogs and cats.

Actress.  A very teeny tiny part of me would love to be on screen, whether in the movies, televison or even in a commercial.  I think it's the Leo side of me that just wants the attention.  But I could never remember my lines anyway.

Pharmacist.  We had a pharmacist come to my high school for a career day of sorts.  Once I heard "easy to get a job" and "can make a lot of money," I was hooked.  I graduated high school thinking I was going to be a pharmacist.  And just to show I wasn't just lazy and greedy, I did a couple of weeks shadowing a pharmacist for a class and I actually liked the type of work.  So there.  Anyway, I started college with a pre-pharmacy curriculum and after taking my first college chemistry class, my pharmacy dream died...along with my GPA.  That's when I switched to occupational safety and health.

Lawyer.  As a teenager, I had a tendency to talk back and argue with the parents.  One day after an arguement, or maybe it was a couple of times, I don't remember, the parents said I would make a great lawyer.  Well, briefly, I thought it might work.  I didn't want to be a lawyer that went to court or anything, gosh, too much pressure.  I wanted to be a "behind the scenes" laywer, like a corporate lawyer or something.  Then I realized how much school that would entail and the bar exam and it was just not for me.

Pastry chef.  I blame this on the pastry competition I stumbled upon on the Food Network.  The pastries and chocolates were pieces of art...and was completely edible.  It blew my mind and I was hooked since.  I don't think I'm creative at all, but give me some hot sugar and chocolate, I might be able to pull something off.  This then led me to dream of opening a pastry shop (Heidi's Tasty Pastries).  No bagels or bread.  Just desserts...and art.  To this day, I have a passion for making desserts and would like to someday make a business of it.

Director/Producer.  Ok.  So this one kind came out of nowhere.  In college, I took a sort of skills test and my results were of the creative/writer type.  Again, I don't think I'm artsy creative so I shrugged it off.  I told a college professor this and he asked if I ever considered writing and producing safety videos (I was in my new major at the time).  That never occured to me and I thought that making those cheesy safety videos and clips would be so much fun.  So it was on my mind for about a full year. 

Environmental scientist.  I took an environmental engineering class and it got me so hyped about pollution and chemical spills and runoff that I wanted to do something.  In fact, my junior year of college I went to a career fair hoping to get an internship with the state's EPA office, but got an internship with OSHA instead, thus starting my industrial hygiene career.

Food or travel writer.  As I get older, all I wanna do is travel and eat.  Is that so much to ask for?  I mean really.  If I got a job that would pay me to eat and/or travel and I write about it, done.  I'd drop everything in a flash.

Food scientist.  How cool would it be to create flavors?  Seriously.  Who else do you think created flavored potato chips or vanilla coke?  Science!

Technical Difficulties

So since the last post, I've been having some technical difficulties. 

First, my iPad is stuck on the startup screen and I can't use it right now.  In order to attempt to fix it, I need to have an updated iTunes, which I've been trying to download on our new computer.  But we've had spotty internet since the move, and I can't get a complete download.

And, as I said earlier, our internet has been spotty ever since the move and after we bought a brand new router and modem.  I haven't had a successful at home internet session in the last 2 weeks.

Thankfully, I'm able to get on the internet at work.  But, work isn't the greatest spot for me to make a blog post.  I can't upload pictures, something to do with the network's security settings.  And alot of my posts I like to include pictures because well, I'm just a visual sort of person and I imagine the people that read this are as well.

So, to shorten it up, blog posts will be kinda slow for a bit, til all of our technology gets back up and is reliable again.

Tasty Thursday

It's been so hard for me to get back in a routine since moving.  It wasn't really until the last couple of days really that things started going back to normal.

Anyway, I'm the type of person that likes to find an occasion to bake something.  Well, prior to moving, I made these delicious peanut butter cookies.  OMG.  Normally peanut butter cookies are on the crunchier, harder side.  Not these babies from Sally's Baking Addiction.  The softest PB cookies ever.  And since I made these for July 4th, I snazzed them up with red, white and blue M+Ms.



Peanut Butter M&M Cookies
from Sally's Baking Addiction

1 stick of salted butter, softened at room temp
1/2 c light brown sugar
1/4 c sugar
1 egg
3/4 c creamy peanut butter (I'm pretty sure I put in more but it still tasted good)
1 tsp vanilla extract
1/2 tsp baking soda
1 1/4 c flour
1 1/2 c M&Ms

Cream together the butter and sugars.  Mix in the peanut butter, egg and vanilla, in that order.  Slowly mix in the baking soda and flour, but don't over mix.  Fold in the M&Ms.  Chill the dough for at least 30 minutes.  You can also do what I did and take a couple bites of the dough as it chills...

Preheat the oven to 350 degrees.  Drop the chilled dough onto ungreased cookie sheets.  And to make the cookies pretty you can press a couple of the M&Ms onto the top of the dough balls.  Press the dough balls a little since they don't spread much during baking.  Bake for 8-9 minutes.  

Don't over bake them!  They'll be soft and look undone, but they'll firm up as they cool.

Post Move

Lesson Learned:  Get rid of your junk PRIOR to moving.

This moving thing sucked!

Our original plan was to have a week to transition from old place to new place.  Welp, no, that didn't happen.  We couldn't get our new keys until later than expected and only had about one day to move everything.  We had a friend help us with the bulk of the heavy stuff thankfully.  Our moving went from 5pm to noon the next day.  That's with 3 U Haul trips and about 1 hour of sleep and no food.  I'm just now getting over my soreness (the move started Thursday night, it's now Wednesday).

Looking back, our biggest problem was the sheer amount of stuff we had.  The BF and I lived at our last place for years and accumulated alot since.  But mostly everything had a place, so it was hard to tell how much stuff we truly had.  I couldn't even tell you how many boxes we had of stuff that I haven't seen in years. 

But now that we're moved in and in the process of making this our new home sweet home, I'll just have to add a massive purge to the ever growing list of to dos.

High School Reunions

My ten year high school reunion took place in my hometown over the weekend.

Yea.

I didn't go.

And looking at the pictures that some of my former classmates posted online...I'm glad I didn't.

I'm not saying I'm too cool for school.  In fact, I'll admit I'm the complete opposite.

Jase Robertson, from that Duck Dynasty show (which I'll admit to watch every now and again) summed it up best with these words: 

"Here's my take on high school reunions, if I haven't contacted you in 20 years (10 years, in my case) there's probably a reason."

And besides, there's something called Facebook nowadays.  We can all remain "friends" with each other after graduation.  Years later, if we're curious about what someone's up to, there's always Facebook stalking.

Sure we're told the reason for high school reunions are to "catch up" and "make more memories."  Well, we all know the real reason for reunions are to see what everyone is up to because, let's face it, we're nosy and we want to be judgy and feel better about ourselves, because...we're a bunch of bastards and bitches.  And with the power of the internet, we can do that in the safety of our own home.

Once I grew out of my awkward phase, I actually liked high school and I genuinely liked my classmates...most of them anyway.  But another reason I chose not go to my reunion, is I don't have much in common with these folks anymore.  Back then, we were all high school students.  Just being classmates bound us together.  After ten years, we don't have that connection anymore. 

Who knows, maybe I'll go to the twenty year reunion.  At least at that point, most of us will have our own families and have done more with our lives.  That would at least make for better conversations.

My Baby Revelation

So last week, I had the joy of meeting my 5 month old niece for the first time.

She is the cutest little thing and I had some good auntie bonding time. 

And after meeting her, I've come to a realization.  Babies TERRIFY me.

Now, I haven't come around that many babies in my life.  I was going on 11 years when my baby brother was born.  There was a novel interest to see and play with him, but honestly, at the time, I didn't care.  All I knew was, there was this little creature taking away my limelight and I didn't have time for that! 

Once Will, my brother, became a toddler, I warmed up to the idea.  Toddlers are just fun.  They can talk, walk, and are all around entertaining mini humans.  During a year in college, I had a job providing daycare at a martial arts studio.  It was easy money and I got to play with kids for a couple of hours.  So, don't get me wrong, I love kids.  I'm such a kid at heart, I feel like I can relate to them.

Babies, on the other hand, are a different story.  I can't relate to a baby.  I don't know how to interact with them.  As cute as my little niece was, there were moments, I had no idea what to do with her.  But I will say, there was an odd sense of calm within me when Lola fell asleep in my arms.  Which just proves that there's a sensitive person somewhere in me.

The biggest reason why babies terrify me is best explained in the following scenario.  My brother, his wife and the baby arrived at my parents' house pretty late.  The baby was asleep in the car seat and ended up waking up in the commotion of unloading everything.  The poor thing slowly looks at me, my little brother, mom and stepdad, who are essentially strangers to her and are crowding around her carseat trying to get a look.  Then searches for her own mom and dad, and when she realizes they're not around, she starts crying.  And not just soft crying, but loud crying, which progresses into top of the lungs crying.  At least that's how I percieved everything to have gone down.  And to her credit, anyone in their right mind would've started crying if waking up to strangers right in their face.  It was during her crying fit that I had my revelation.  The Holy Spirit left my body and I was terrified.

I think this scared me so much because when a baby cries, you don't completely know the reason for the crying.  I mean, you have an idea, but you're not 100% sure.  It stresses me out to have something happening and not knowing why.  That and the noise of the crying itself would be stressful enough.

I also feel I have no maternal instinct.  And I'm too rough.  And I'm too clumsy.  I AM the reason we can't have nice things.  I can't even count how many things I've dropped because of my butter fingers.  I've dropped the cat and dog plenty of times.  What's stopping me from dropping my own baby? 

I've voiced this concern to other people and they all say, "It's different with your own baby."  Well, I sure hope so.  You know those videos of those dads that ends up throwing a ball, and smacks their kid right in the face.  Yep.  Pretty sure that will be me...

Tasty Tuesday: Avocado Breakfast Pizza

I love, love avocado.  That's all I'm going to say because words cannot express how much I love it.

So, I've been using my avocado love and incorporating that into breakfast lately.  

The basics include:  pocketless pita bread, half of an avocado, and an egg.

I mash up my avocado, mixed it with a little lemon juice and salt and spread it on a toasted pita.  The day of this pic I had some leftover sprouts, so I tossed those on there.  My original intent with the egg was to fry it but I forgot that's what I was doing and ended up scrambling it.  Still worked though!  The other mornings I make this, I do fry the egg instead.  Personally for me, fried egg on top is easier to eat since pieces of egg  aren't falling off the slice.  And of course, I have to add hot sauce because that just wouldn't be me.

My Old Kentucky Home Recap

So last week I went to Kentucky to see my baby niece for the first time...oh and the rest of my family.

It was a solo trip for me.  The BF got to live the bachelor life for a couple of days.

It was a well needed break and it's always good to see family, right?

Recap:
-Caught up on much needed sleep
-Caught up on much needed reading
-Caught up on doing absolutely nothing
-Beat a bunch of levels in Candy Crush
-Ate loads of Korean food
-Added more to my little's brother's Spiderman memorabilia...hahahaha
-Met my 5 month old niece Lola for the first time.  She cried when I first saw her, but she came around after sleeping the trauma away.
-Had a conversation with Lola, fed her, and had her fall asleep in my arms.  So cute!
-Accomplished 2 things off my Before 30 List.  More on that another time.
-Hung out with my high school besties.  We had a cookout and hung out on the porch in the country.  I'm pretty sure we looked a little redneck.  Oh, the South, how I've missed thee...
-Bit by 8 mosquitoes while hanging out with the besties.  I still have the bites.  I consider them my mementos.
-On the plane, sat by a man that could've held the Guinness record for most body hair.  Pretty sure I couldn't see any skin there was so much hair.  And we were armrest buddies.  Yessss.
-Being picked up at the airport by the BF and eating burritos.  Not too shabby a welcome.  Oh and he bought me a Firefly shirt.  Points for him.

I want to first start off by stating that as the title states, this post is a complete first world problem.  There are bigger things to gripe about.  And there are people out there that definately have more problems than me.  But I do have family and friends who read my blog and genuinely care for me and the best way I can explain everything is through writing.

So if you've got bigger fish to fry and don't care to hear about my story then stop right now and go onto something else.


Anyway, for those that care or are just plain curious, about two weeks ago, I had a phone interview for a position at the Center for Disease Control in Atlanta.  In the end, I wasn't offered the position.  And looking back, I'm kind of relieved.  I mean the CDC houses like every single disease known to man...and then some.  There's some scary stuff there, and the job would've had me potentially working around that sh*t!  I had a feeling from the questions I was asked that I wasn't gonna get the job.  I can't remember the questions anymore but I do recall staring at the phone like, "What the eff are they talking about?  Is this Klingon?"  The questions had me clueless and I felt like the women interviewers were "judgy."  A little background:  interviews for federal positions usually involve a panel of interviewers who take turns asking the same set of questions for every interviewee.  Well, I had five people interviewing me, four women and one male.  The guy interviewer was awesome and I had him cracking up, but the ladies...nope.  Judgy.  I get that alot though from female leadership.   But that's another issue I'll save for another day.

So I didn't get the job and I'm still at the one at now.  So, in the end, nothing was lost.  In fact, the week before my interview, I got a promotion that I was actually due for a couple of weeks prior, but didn't get for some reason.  With the promotion now in place, the Atlanta job would've actually been a pay cut (even though it was a lateral position). 

But with that promotion, I'm now "capped out" in my current position.  More background:  with a federal job, you're hired into a certain job series and can go up to a certain level.  Some positions have only one level and some have up to several levels that can be reached with supervisor's approval after a year.  Well, with me, I've reached my highest level for my particular position.  I'll get monetary increases after every couple of years, but career wise, I'm peaked.  The only way to get anything different is to apply and compete for higher positions, which there are at my current place of work.  But those guys don't plan on leaving anytime soon.  So I'm stuck.  I applied for the CDC mainly out of curiosity.  But now, I don't have much incentive for staying where I am and as much I do genuinely like the job I have, I can't stay if I'm like this. 

Besides, I am ready to leave Maryland.  There are nice aspects of this place, but the few negatives are pretty heavy and piss me off...ie. the cost of living and the general agressiveness of everyone.  So, I'm keeping my eyes and ears open.

My Farewell to The Office

 
So I know The Office series finale was last week.  Watching that last episode, I almost teared up, especially when Michael Scott came to Dwight's wedding.  I. Almost. Bawled. My. Eyes. Out.   And the fact that show is truly over didn't hit me until last night.

I faithfully watched that show since the beginning.  And by faithfully, I mean I dedicated my Thursday nights (and it might've been on other nights in the early years) to catching the episode.  I didn't DVR that stuff.  I always tried to watch the original airing.  The only time I couldn't watch it was when I was working at Cedar Point in the summers.  But I'll be damned, I caught every single rerun until I saw an episode that was new to me. 

I remember the utter awkardness of the pilot episode and Michael's hair.  Man, that hair was horrible.  I remember the looks Jim gave to the camera.  The show was so different compared to others.  I was hooked from the beginning. 

I'll admit, some seasons weren't the greatest and I felt the writing lacked.  But I was still faithful.

I know that in every job I have, I'll try to find the Phyllis of the group.  The Stanley.  The Creed.  The Michael.  The Dwight.  I will always giggle a little when I hear a set up to "That's what she said."  And bears, beets, and Battlestar Galactica.

Tasty Tuesday

So I feel like I've slacked on this here blog.  Well, I do have an excuse!  Tobin and I just happened to be off work at the same time, which we hardly ever have.  I have weekends off, while he usually works every weekend and late nights throughout the week.  So, needless to say, I feel guilty when I pull myself away from spending time with him to blog.

And...now I'm back. 

And I bring you my Tasty Tuesday.   

I love taquitos.  Who doesn't?  Seriously.  And I love nachos.  If you don't then I don't care to be friends with you.

Let's just ditch the chips typically found in nachos and replace them with taquitos.  Yum.

So you get yourselves some taquitos.  You can make them yourself or just buy them premade and heat them up.  You cut the taquitos in half.  Put them on a plate and top with whatever your little nacho loving heart desires.

Apartment Woes

I wanted to start off by saying I'm in a really good mood right now.  I found out my promotion finally got through.  Last year, I started a new position (new title, same location, same work) that I applied and competed for.  In the federal system, some jobs have noncompetitive promotion potential, and after a year, upon supervisor's discretion, you get promoted.  Well, the last couple of weeks, I've been a little bummed out because, a year later...no promotion.  I thought I did something wrong and that my boss hated me and I was getting disgruntled.  So needless to say, I'm having a great start to the weekend.  The BF and I will be able to do more activities (Step Brother's reference....watch it).

Anyway, back to the reason of my post.

After five years, we are not renewing our lease.  We have our reasons, with cost being the biggest.  But I was thinking about the past 5 years of living here and I came to the realization, we should've moved out a long time ago.

Now granted, our place isn't in a bad area.  In fact, I love the area, the neighborhood is quiet and the location is convenient to everything.  And I even like our apartment.  We've just had so many issues with this place.  I think the biggest problem is the fact that the management company is nationwide with properties across the country.  Once a company gets to a certain size, I've noticed quality of service goes down, and corners are cut, while prices increase.  And I know not all big companies are like that, but our management company is.  And some of our gripes were beyond their control (ie. neighbors).

From the beginning:
-Our first lease, we paid $1028/month.  A little expensive that what we were expecting, but whatever.
-Shortly after moving in, we've noticed how many corners were cut during construction.  Studs aren't spaced right in the wall.  Caulk was used to secure stuff to the walls.  Our ceiling is crooked.  But again, whatever, we were ok with that.
-The first month, in the middle of the night, our bathroom ceiling starts leaking, like a lot.  Apparently, right before we moved in, the plumbing in between ours and the tenants us above had issues.  It was supposed to have been fixed but the tenant above us decided to use the shower before the problem was completely fixed and flooded our bathroom.  Maintenance "fixed" it and put drywall and tape up.  Never painted it over though.  Which is a good thing because it continued to happen a couple of more times.  Apparently, the neighbor above us didn't want to wait and would run the shower and continue to flood our bathroom again.  Oh, and both our apartments have two bathrooms.  It's not like they didn't have another shower to use.  That whole routine finally stopped and five years later, we still have taped drywall on our ceiling.  Never painted over.  It's attractive actually....
-Every year, our HVAC stopped working.  Either we didn't have heat or water would pour out of our HVAC unit and flood our carpeted closet.  Awesome.  Carpet and water is a great combination...
-The same neighbors that flooded our one bathroom, flooded the other.  Toilet water was raining down everywhere.  It was quite gross.  I called the emergency maintenance guy, who happened to be in another state, hours away.  Not really sure how that made sense, but whatever. I ended up using our own wet vac to clean it up.  Oh and by the time maintenance came over, everything was dried and when the lovely neighbors above us were asked if their toilet overflowed, they said it never did.
-We've had a slow toilet leak in the tank for I think the last year.  Maintenance has come by a couple of times and claims to have fixed it.  The toilet is leaking right now.
-We had to move out of our place for two weeks, so our floor could get jackhammered up.  Apparently, the same apartment in every building had to have this done.  To their credit, they did put us up in an unoccupied and furnished apartment, but we were told about it not even a full week before.  Oh and when we moved back in, the carpet was never put back right (there's an inch between the carpet and the wall).  There's concrete and visible wood in that one inch space.  And it's inhibited the cat to constantly pick at the carpet along the wall.  And there was concrete dust everywhere.  Every single thing in our place had to get cleaned....by us, well mainly the BF.
-The sump pump stopped, so naturally our living room floods.  It starts at the corner where all of our electronics are.  Yea.  Maintenance barely wet vacced our carpet and left fans.  That's it.
-The BF has had multiple packages stolen.  He was hesitant to order stuff online.  One time, we saw a package that was ripped open with women's clothing pulled out.  We deduced it was a guy taking the packages.  If he has to order anything, he uses my name as the "Ship to."
-Every time I call emergency maintenance, I get sent to a call center in Virginia.  I live in Maryland.
-Our upstairs neighbors (who have long since left, Thank God.)  Constant smokers who'd throw cigarette butts right in front of our window.  The door to our building locks, which I like because it prevents random people from walking in.  Anyway, there were quite some times, I'd be right behind them with my arms full and they would go out of the way to lock the door behind them.  I'd then have to put my stuff down on the ground to unlock the door.  And I'm pretty sure they were the ones stealing the BF's stuff.
-Every lease renewal, there's a new monthly fee that we weren't told about.
-We've never seen the same maintenance man or office staff twice.  It's always someone different.  I guess the staff is a revolving door.
-And we're now paying $1320/month.  And it just doesn't feel worth it.
-And because we're moving out, we have to pay a couple of hundred to have our carpet steam cleaned and shampooed, even when we know it's getting replaced anyway.  It's frustrating, and there's nothing we can do.

We're fortunate enough that the BF is a handyman.  The list would've been so much longer if we had rely on the apartment services to remediate our issues.  We found it was easier if the BF just fixed things himself.  His fixes ended up being better anyway.

We're also fortunate enough that we were able to find another place for way cheaper.  The place is actually bigger, the management company is smaller, our commutes are about the same, the kitchen is bigger and I will have tons of closet space.  Just what I need with all this crap I have.  And the BF has a friend that lives there and since he's getting a referral bonus, he better believe he's helping us move.

I also found out I have something coming up next week that could put a monkey wrench into this whole lease ending/moving thing.  It's essentially a good thing, but depending on how it goes, it could change my plans for the next few months.  I'll talk more about it after.

Tasty Thursday

Do you like mahi mahi?

Do you like tacos?  Or better yet, do you like double decker tacos?

Do you like Rachael Ray?

Well, if you've said yes to any of those, I have the recipe for you!  Mahi mahi tacos!

Ever since that fateful day I had a fresh fish taco on the side of the road in Maui (as sketchy as this roadside eatery was, the food was delicious).  I've been hooked on fish tacos since and I've unsuccessfully attempted to create many variations.

This particular recipe scored some serious points.  I liked it.  The BF liked it.  The dog and cat even liked them.  Well, to their credit, they'd eat anything, but regardless, win.  The BF even mentioned that I should share the recipe on the blog.  That's the first time he's said that, so I have to oblige.

For me, what made this was the black bean/chutney mix used in between the taco shells.  OMG.  I've never had anything like it and I could've seriously eaten it by itself with some chips.  And it helps when it's an easy recipe.

Now, don't let the long list of ingredients and instructions scare you.  Rachael's recipe is actually pretty easy and, yes, it did only take me 30 minutes, if not less.

The recipe calls for mango chutney, which I found in the Indian food section of the grocery.  I imagine you could also use other types of fish besides mahi mahi.  And as for myself, I actually eyeballed alot of the quantities of the ingredients.  So, adjust according to your taste!


Rachael Ray's My-oh-Mahi! That's a Good Fish Taco  

1/4 c canola oil
1 jalapeno, seeded and finely chopped -- I just used a couple spoonfuls of jarred diced jalapenos
1 red onion, 1/4 of it finely chopped and the remainder thinly sliced -- I did it vice versa
1 garlic clove, minced or grated -- I eyeballed it with already minced garlic
15 oz can of black beans, drained
1 tsp ground cumin
salt and pepper, to taste
1/2 c mango chutney
2 limes -- I used squirts of concentrated lime juice
2 tbsp hot sauce
3 tbsp honey
a handful of fresh cilantro, finely chopped
1/2 head of red cabbage, shredded
4 mahi mahi fillets
1 tbsp grill seasoning -- I used a combo of my own seasonings and added some chipotle chili powder
8 each of hard shell tacos and soft shells
sour cream or whatever toppings you want

Heat a tablespoon of oil over medium heat and add the jalapeno, chopped red onion, and garlic.  Cook for 3-4 minutes, then add the beans and cumin and mash together.  Season the beans with salt and pepper and fold in the chutney.  Reduce the heat to low, stirring now and then to keep from burning.  If the beans dry out, add a splash of water.

Zest one of the limes and set aside.  Combine the juice of both limes, hot sauce, honey, 2 tablespoons of the oil, salt and pepper with the sliced onion, cilantro and shredded cabbage.  Toss it all to combine.

Heat a grill or preheat the broiler.  Season the fish with the remaining oil, 2 teaspoons of lime zest, and the grill seasoning.  Cook the fish until cooked through, turning once.

Glue the hard shells to the soft shell tacos with a couple spoonfuls of the mashed black beans.  Fill your tacos with some flaked fish and top with the cabbage slaw and whatever else your tummy desires.

Tasty Thursday

What's a girl to do when she really wants rice krispy treats and oreos?  Well that predicament didn't last long.  Crush up some oreos and add it to your rice krispy mix.  What would've lasted a week...possibly two in a normal household lasted us, oh, maybe three days...I would have one for breakfast and one or two later for snacks.  Hey.  Don't judge.


And, want to know a good alcoholic drink if you don't like the taste of regular beer.  Lager + lemonade.  It's called a Radler, or some might even call it a Shandy.  Either way, it's delicious and I could seriously see these creeping up on a person.  I happened to use Land Shark since that's what we had.  Mix equal amounts of lemonade and beer, this'll depend on your taste preference, half and half is just a good starting point.  With summer coming, this'll be a great drink.  Let the young ones drink the lemonade and you'll drink the Radlers.
